Clover honey's harvest is during the summer season. The reception area more suited for this type of honey is the Po valley. The color is very clear and ranges from nearly white to pale yellow.

The particularity of clover honey is given by the very delicate perfume and taste, slightly vegetal. In the mouth it gives a feeling of freshness and closely recalls a toffee. Because of these delicate and not very sharp characteristics is a popular table honey.

It is also good to sweeten food replacing sugar, as well as in the preparation of sweets and infusions. The pure clover honey is increasingly hard to find for the gradual disappearance of monofloral lawns. For this reason, clover honey is getting very rare and valuable.

Serving suggestion

Excellent accompaniment to soft and semi-hard goat cheese and to all cow cheeses.
