Harvest time: June-July and September
The Eucalyptus honey is produced primarily from two different plant species: the Eucalyptus camaldulensis (which blooms in July-August) and Eucalyptus occidentals (which blooms in September).
The honey produced in the summer turns out to be lighter in colour and more delicate flavour while the one produced in September has a quite more pronounced.
The eucalyptus honey is part of the group of aromatic honeys aromatic and it is typical for its intense aroma recalling liquorice. The crystallization is fine and compact, very pleasing to the palate.
Honey Eucalyptus pairs very well, by affinity, with aged cheese, such as Parmesan or Pecorino.
