Taste: Floral with vegetal notes. Slightly peppery.

The thistle is a plant typical of the Mediterranean area, it grows wild in the arid and uncultivated areas of Sicily and Calabria. 

From the flowers of the thistle, which blooms in early summer, bees get a very fine honey, with a very persistent fragrance and aroma. The thistle honey crystallizes spontaneously some months after harvest.

Serving suggestion:

Ideal with savory and medium-aged cheeses such as the Bel Paese.
